    Garlic Chicken Pizza

    I added mushrooms to this and I also added chopped artichokes to the garlic butter just to give it a lil more substance. I used my own fresh basil and cilantro and cherry tomatoes instead of Romas, too, and my chives are going crazy, so those took the place of green onions. I didn't have ricotta on hand, so used some crumbled goat cheese.

    And the chicken was left over from an oven baked. It all turned out great.... is it still close enough to the recipe, I hope??

    Mmmm, garlic butter sauce. That sounds great on a chicken pizza. It looks wonderful. That looks like pesto would work on that, too.

    My gosh that looks delicious! I think I'm gonna make this next week, husbands off for 5 days (grrrr...) so I need lots of lunch ideas so we don't go out every day. I actually have the ricotta and may add mushrooms to my part like you did. Yum, looks good!

    It really was good, Marie...and super quick and easy. I know I butchered it from it's original post, but not because it doesn't sound great, as is, just cus I had all the fresh stuff, I had roasted two chickens, so had left over meat, and though I've used garlic butter on pizza, and it's great!!!, I just wanted to add the artichokes for texture on this one.

    And, ricotta isn't something I usually have on hand and I've not been out to markets every other day as I used to be able to do...so, cooking from what's on hand has been necessary. :)

    Absolutely Keni, use what you've got! I have used ricotta when making pizza and it's really very good! I don't usually have it on hand either, just when a lasagna or pizza is on the week's menu, then I will pick some up:)

    I used cherry tomatoes, halved, for this. I took Keni's idea and added some course chopped shrooms. Used a pre made crust. This is an excellent pizza!! Added my pic.
