This is an incredibly simple chicken pizza recipe that is created to perfection with garlic butter sauce. And if you go light on the butter, this can be a quite healthy main dish. Let me know what you think of it.

  • 2 tablespoons softened butter
  • 2 cloves minced garlic
  • 2 tbspns chopped green onion
  • 1 skinless boneless chicken breast half
  • 1/2 tspn dried basil
  • 1/2 cup chopped cilantro
  • 1/4 cup grated Parmesan
  • 2 diced roma plum tomatoes
  • 1/2 cup Ricotta cheese
  • 1 10 oz can refrigerated pizza crust dough

Directions
  1. Put your chicken breast in a saucepan with enough water to submerge it. Bring the water to a boil and cook until the chicken is no longer pink (and the juices are clear...approximately 20 minutes). Drain the chicken then cut it into medium-sized strips.
  2. Preheat your oven to 350 F (175 C).
  3. Melt the butter, garlic, basil and onion in a skillet over medium heat. Pour this sauce into a dish and refrigerate it until it sets.
  4. Now roll out your pizza dough nice and flat. Place it onto a baking sheet and evenly spread your herb butter sauce over the surface (the back of a spoon works nicely). Spread the chicken strips over the pizza then sprinkle with Ricotta. And finally finish the toppings off with slices of tomatoes, cilantro and Parmesan.
  5. Bake for 15 to 20 minutes in the aforementioned preheated oven. The pizza crust will brown when it is finished. Let the pizza cool before slicing and serving.

This was pretty good. i modified it a bit though. i added an 8oz can of tomato sauce. and after i put the sauce on the crust, i tossed and simmered the chicken a bit in the left over sauce. this was good stuff. next time i'll get my oven about 50 degrees hotter.

I just found this site yesterday and decided to try the garlic pizza...I changed some ingredients: no onions, added artichoke hearts, italian seasoned mushrooms, and lots of mozzarella. It was delicious. Thanks for a great idea

Alterations


I like to heat the oven to 400 instead


I tried this the other day with homemade whole-wheat pizza dough instead. It was pretty spectacular. And if you cut out the butter and go light on the cheese, this can be pretty healthy.


I made this last night and did not care for the refrigerated pizza crust ,it was to hard and crunchy. As well, I think I would double the butter mixture,there was not enough to spread around. The flavor was good and I will make this again with a few alterations.
