This is a seriously good soup. Roasting the butternut makes all the diference. I used portuguese bacon and actually made it crispy in the oven. I didn't want to waste all the heat from roasting the butternut squash. Also used an immersion blender, I find soups easier to pure with it.
Very very good recipe, will make it more often during this winter time. Had 2 bowls of this and then slept like a baby :)
