    Quick easy recipe. Needs salt first or in the rub to bolster the flavor.
    Not too keen on the skin but I ate it. Not because of the spice rub but I've been off chicken skin for the longest. For the chicken skin lovers, go for it.
    People I served it too had the same comment.
    I doubled the recipe and baked it in a 10x15 dish. Package of quarters I had had 5 quarters in it. Expanded the recipe appropriately.
    Used fresh mushrooms and made my own chicken gravy.
    Served it up with rice and fried cabbage.

Then after cooking was super thin from chicken fat. If I would have been feeling better I would have poured it off and made it a proper gravy. As it was it was a really tasty chicken that didn't need any extra bbq sauce, but try to tell that to the family ! lol
    thinking the leftover juices and chicken might become a tasty little soup for moi!

Skimmed as much fat as I could, added 2 cups of water and a couple of chicken bouillioun cubes (the spice and herb variety) brought to a boil with the chicken pulled of the bone, skin discarded. Then added 3/4 to a cup of long grain rice. Soaked up all the juices nicely. Very tasty.

    I like a good dish like that that is versatile with the leftovers...I see you needed more seasoning. I think I mentioned how mine already came from the store with a bbq rub on them. Nice and juicy...

    Mine were naked chicken quarters. And since I diluted the sauce with water I added the bouillon cubes because the pea soup called for it. Probably would have been OK without the addition. Couldn't stand to throw out the leftover juice. As is, the juice was put in the fridge overnight for the fat to solidify at the top and be skimmed off. It definitely was a bonus for the pea soup.
