Eclair Cake

    Recipe by Sm8085: Eclair Cake
    Never had an eclair cake before. It reminds me of a banana pudding sans the bananas and graham crackers instead of vanilla wafers. AND IT'S TOPPED WITH FROSTING.
    No way it's not going to be good.
    In the fridge chillin' overnight. Wonder if my little bread monkey will bore a hole in it before the sun rises.
    Whipped a cup of heavy cream instead of using the prepackaged frozen stuff.
    I was afraid the pudding would be a little too soupy for layering it up per instructions but all turned out well.
    Used Hersheys Perfect Chocolate Chocolate Frosting instead of prepackaged frosting.
    As an afterthought I could have looked up how to make my own graham crackers.

    I'm not much a sweets person but that looked really good to me. I do love some pudding once in a while. I think I'll save that one for the next family to-do. Was the frosting easy to spread or did you chill it as suggested before frosting?

    Grind up the crackers and fold them into the pudding mix. Can either fold the frosting in too or paint the top of the pudding mix or layer it alternating pudding and frosting. Display in wide deep goblets. Refrigerate overnight to let the cracker crumbs soften.

    Pointsevenout, is the flavor similar? It has to be that... And if that is the case I will be making this one of these days.

    I've had a real eclair (after working at Rollande et Pierre and Le Pompano) where they featured eclair desserts. I can honestly say, it is not like the texture of a real eclair, but the flavor is quite yummy. The chocolate is a little overpowering and isn't as delicate as the eclairs I've eaten in the past, but there is nothing wrong with a little extra chocolate love in anything.

    It is quite yummy Notyo. The icing did set up a little stiffer than the pudding. I didn't mind the chocolate flavor at all. Graham crackers soaked up some liquid in the pudding to become soft. Didn't taste like banana pudding as I had first surmised.
    Still think it could all be folded together and served up as a mousse.
    Looks pretty with all the layering going on.
