I used black, because that's what I had... luv, it's one of the spices I got in my "box o'spice" that I mentioned a few months back on the Refugees...that you guys helped me pick out! :) I just cracked the pods with the flat of my knife, scraped out the innards and tossed 'em in the pot with the oil and onions. :) And, I just tossed my dried cinnamon sticks, about 2 inches each, and by the time the stew was done, there were swelled up to twice their original size. :) I fished those out and tossed them. The peppers broke down enough that you got lil bits here and there...if you don't want that, I suggest removing them when you start to see them falling apart.

    and, P7O... the sub ratio seems to be 1/16 ground for each pod. And, the mushrooms were a great addition...I don't think I'd make it without. This was a hearty, flavorful meal, but, as I said in my review... black pepper is a prominent flavor, here.

    Lol, the first time I used my cardamom pods a couple months ago I didn't know you were supposed to actually open them, I just threw them in whole! A week later I saw a cooking show with someone using them and I then understood why I hadn't tasted the cardamom in the soup I made! Well I might give this one a try soon and get the right use out of my pods!

I skipped the cloves too as we're not fans of cloves either. It's smelling good. I did however actually miss the part on how I was supposed to take the spiced onion mixture out BEFORE I added the beef, but we're just moving along and we'll see how it turns out in the end. I actually added a generous helping of garam masala to the dry spices too.

    Are you using beef?

    Oh, and I did follow the instructions about the onion mixture, but I don't think it'll have everlasting negative effects to just let it be! hehehehe

    and....@mommyluvs.... yes, cardamom is much better if you remove it from the pod. ;)

    Used a 4lb chuck roast cubed instead of stew meat. Added a cup of cream because I was over on the meat amount by one pound and that meant more flour.
    And since we were using apple cider vinegar, I spied a lonely apple on the counter which was quickly peeled, cored, chopped and added to the stew to bolster the ACV flavor.
