Enchilada Casserole

    Posted by Wynnebaer.....Made this for dinner last night,it was delicious. I added some chopped jalapeno,garlic powder,salt ,cumin and pepper to the meat. I used ground turkey.
    The next time ,I may cut back on the sauce. It was a little more liquid than I would like. In Wynne's pic,it seemed more firm but followed recipe exactly. It had a wonderful taste and we enjoyed it. Thanks for a nice,easy recipe....

    Made this on Friday night & what a great dish! Lots of flavor and easy to prepare, great for a weeknight meal, especially if the sauce is made ahead of time (I made my own, using Elgourmand’s recipe). This was a big hit and will definitely be made again (and again!) in our house. I used fat free refried beans to mix with my meat and sauce, because that’s what I had and the result was wonderful! Since we have varying opinions in our house about most beans, but a general consensus regarding refried beans, I’ll stick with that variation, since it works for us. I also added a bit of jalapeno, per Pat’s recommendation. I think this recipe can hold up to lots of cool experimentation and variations.

    Frankieanne, It's just the 2 of us here and I cook up the meat and add the beans, etc and split it in half and freeze half for another time. And I assemble it in a loaf pan using only 2 tortillas cut in half.....It's great stuffed in poblanos too. I know you cook for one alot so just a suggestion.

    I didn't have any trouble with excess liquid when I made this and it may have something to do with my use of refried beans instead of canned beans. Also, I didn't add the can of green chiles, since I didn't have any on hand, but I would agree that perhaps cutting that amount of enchilada sauce out would offset the liquid of the chiles. I also used homemade enchilida sauce, which was thicker than a canned sauce, so the consistency there may have helped mine. I wonder if cutting the sauce in half would be cutting too much out?

    I haven't had a problem with it having too much liquid but I would certainly suggest if you make it again to decrease the amount of sauce to suit your taste....Happy to hear you enjoyed it otherwise.

I also added 2 chopped jalapenos (one seeded) cooked with the onions so they weren't very hot/spicy at all, it was a nice addition:) Added my pics to the recipe..thanks Corinne for another wonderful recipe!

    Corinne, on the contrary, it turned out perfect! Not liquidy at all..that's why I posted my 2 pics, to show the casserole before & after slicing into it! I used a can of sauce which had 7 - 1/4 cups and that equals 1 3/4 cups:) See how smart I am..LOL
