How to make it

  • Preheat oven to 350
  • In skillet over medium heat, add oil
  • Add onion and ground beef; break up and cook until beef no longer pink
  • Drain oil
  • In mixing bowl combine meat mixture, chilies, beans and 1 cup enchilada sauce
  • Coat bottom of 8x8 baking dish with cooking spray
  • Layer Tortilla, meat mixture, sauce and then cheese
  • Repeat 3 more times
  • Bake for 30 minutes or until hot and bubbly
  • Serve with sour cream, salsa and guacamole on the side.

    I made this the other night to last me over the long weekend. I don't know what happened, but I had a lot of liquid in my dish as you can see in my picture. But, I drained it off and it was a very delicious dish! I think a lot could be done with this recipe to suit one's taste. I was thinking some green onions on top would be good!

    Made this on Friday night & what a great dish! Lots of flavor and easy to prepare, great for a weeknight meal, especially if the sauce is made ahead of time (I made my own, using Elgourmand’s recipe). This was a big hit and will definitely be made again (and again!) in our house. I used fat free refried beans to mix with my meat and sauce, because that’s what I had and the result was wonderful! Since we have varying opinions in our house about most beans, but a general consensus regarding refried beans, I’ll stick with that variation, since it works for us. I also added a bit of jalapeno, per Pat’s recommendation. I think this recipe can hold up to lots of cool experimentation and variations.
