Enchilada Casserole

- 1 lb. ground beef (shredded chicken can be used here) shopping list
- 1 small onion shopping list
- olive oil shopping list
- 1 can pinto beans, drained...(I've used charro beans too) shopping list
- 1 4 oz. can green chilies shopping list
- 2 cups enchilada sauce shopping list
- 4 8 in. flour tortillas shopping list
- 2 cups mexican cheese shopping list
How to make it
- Preheat oven to 350
- In skillet over medium heat, add oil
- Add onion and ground beef; break up and cook until beef no longer pink
- Drain oil
- In mixing bowl combine meat mixture, chilies, beans and 1 cup enchilada sauce
- Coat bottom of 8x8 baking dish with cooking spray
- Layer Tortilla, meat mixture, sauce and then cheese
- Repeat 3 more times
- Bake for 30 minutes or until hot and bubbly
- Serve with sour cream, salsa and guacamole on the side.
