Euro Potatoes

    These are delicious potatoes! I was worried about the potatoes being hard to toss around with the olive oil and other things after being boiled. Thought they would fall apart easy, but they didn't. Over boiling would definitely end in that, but I think I took them out just in time. The parmesan added a nice touch and browned up nicely in the broiler. My bag of potatoes was from Sam's (a mix of small red & white potatoes) so it was a good size bag, used half which ended up being a bunch. Chopped up some to make a hash for lunch today which went over very well. Great recipe!!

The old ones used to make such a mess that I hated using and cleaning it. My husband says the new ones aren't like that at all, but I'm still not convinced.

    I probably could have left them in a little longer and they would have crisped up more FA, but they did have a nice snap when cut with a fork :) I just had some for breakfast with some hot sauce, they are addictive!

    I have an electric stove and don't even know where the broiler is on it! The bottom drawer doesn't have an element in it and I use it for storing skillets.

    haha, Bakerme. If you have an electric stove, your broiler element is probably on the top of your oven. I think those drawer broilers are only gas. I had one of those a couple of lifetimes (marriages!) ago. It was gas. :-)

    You must be right, Frankie, because the last oven I had eons ago was gas and the broiler was in the bottom drawer. I only used it a few times and it made such I mess that I swore off broilers ever since! Just for the record, I looked in my electric oven and guess what I found?? A broiler! Who knew?! - haha!

    My oven is 8 yrs. old. You basically put anything that goes in the broiler on a pan and it cooks it from the top. Doesn't make a mess in mine..wonder if the heat was harsher or something, to make it splatter??

    Lol Bakerme, now you have to test out your broiler!! Not sure how it goes with electric ovens, but you gotta find out!! :) :P
