Filet Mignon With Balsamic Reduction

    This. was. so. good. Period! First off doubled the recipe. I really didn't think we would like a New Orleans or Cajun seasoning on a fillet, especially with a balsamic reduction, but man was this good. Used Penzey's Cajun seasoning. Rubbed on liberally like the submitter said. I went ahead and cooked my bacon about 3/4 the way in the pan first because I do not do under cooked bacon, then wrapped around each filet. I poured off about half of the bacon drippings added a little olive oil and put in the steaks. Tried to cook to a med rare but I went a little over I think. I even pulled out my meat thermometer for these, but it is really hard to monitor 4 steaks with it plus cook a side of asparagus and stir the balsamic. Anyway the reduction turned out fantastic and so did the steaks. Will definitely make this one again!!

    Oh my gosh, your photo looks like it came out of a gourmet food magazine! My hubby loves steak, and, other than not using bacon, the method used in that recipe is how we cook it. I've never tried a balsamic reduction, but I bet the balsamic vinegar from Williams-Sonoma would be fabulous in it! Saved.
