    Tomato, Cucumber And Basil Salad
I have made this often. I don't have lemon cukes, but the minis that don't need to be peeled or seeded. They make a great salad. i sub a packet of splenda instead of the sugar just to make the salad more friendly to my current diet. Love the basil version and love a dill version, both are cold fresh and tasty. two thumbs up.

Yum Tina! I have all the ingredients except I have to sub regular cukes for the lemon ones as well. (We can't all be able to whisk off and get gourmet cucumbers out of our garden like Frankieanne! :)) She has pictures up of what the lemon cucumbers look like. Aren't they the weirdest thing hey?
I think I shall make this today!

I'm glad this is working out for you and thank you for the Splenda suggestion! That's good to know.
I've got so many gourmet cucumbers right now I don't know what to do with them all. :)

And I made it too and also give it a thumbs up! My son's comments were "Very fresh...I like the addition of the fresh herbs". And that's a pretty good appraisal. :) Thanks Frankieanne!

Im not much of a salad person but I happened to have all the ingredients for this and thought I would give it a try. I even had fresh basil (just bought a plant) I did add onion abd spinach that I had to use up. Oh, I didnt have romas...well I did at one point, but I ate them so. I had to use 2 large regular and 2 lemon cucumbers and 1/2 a bag of spinach. It came out really pretty and as I set it up for a pic, I realized I left the camera at work. This was really good. It made a large mixing bowl of food, but I have ta ask..........how do you guys get full???????????????? Even after a bowl of ice cream, I feel like I still need something.......

Frankie, this was really good. Never had fresh basil before (at least not that I know of) and its so much different than the dried stuff. Good stuff. I hope my plant will last

NYM, thanks for the heads up on this recipe. Heck, maybe we will see it get added to the group. Where's the IMI police when you need them : P

Fresh basil is good stuff, MrP. Its nice on pizza, too. The addition of the spinach sounds like a great idea! I'm glad you liked the salad. As for getting full, you must not have ever had to diet. Most women have learned to tell themselves that they are full after eating a big salad. :-D

I bet it would be great on pizza. Thats another goal. Making a homemade pizza. Soon, I hope. Need to get a pizza stone.

I cant say that I have ever had to diet. I stay away from high fat foods. Except for pizza. And ice cream. Oh and maybe cheesy stuff. Sometimes french fries.....Did I say ice cream ??? : )

So. I have a question......... what does it take to have this recipe posted to the group?

I honestly Mr P plan on serving this as a side dish when I make it next cucumber season. Maybe to some grilled chicken and pasta? But yes if your like me and other people who try and eat light every once and a while, this would make a nice lunch on it's own :)
