Garden Stuffed Potatoes

    This was SO GOOD!!! Made a few changes for what I had in the fridge. Used cauliflower instead of broccoli (is it still okay to rate it on the recipe?) and used plain Greek yogurt for the sour cream. This was a very flavorful (and filling) baked potato and I think that may have been the first time I put parmesan in my baked potato too :) No salt needed, I almost added some but then changed my mind and glad I didn't. Put it under the broiler instead of the oven.

    I've got the broccoli but the potatoes are a little on the small side. Wonder if that would be OK. and they are baby Yukon Gold I bought for another recipe and have more to use up.
