    This was very good but rather misnamed as it is more lemony than garlicky and not really roasted. My chicken breasts were half submerged in the liquid. Still - I'm not complaining as it was very tasty, very easy and quick and the 20 minutes was right on. I left out the cayenne and used olive oil. I used dried parsley instead of the fresh I have because a whole bunch of quail were out in my yard eating and drinking and I didn't want to disturb them to pick the fresh (if you know me, this makes a whole lotta sense! :D).

    Chuckie, it is a medium red potato, microwaved for four minutes then smashed with a plate. Heat up some oil in a pan (olive, vegetable or whatever) and throw it in for three to four minutes on each side to crisp it up over medium heat. Its pretty simple though I think there is a recipe posted here somewhere but I don't know what they are called. I've been making them for quite a while. I have a friend that requests this every time he comes to dinner. He thinks they are so marvelous when they are really so simple. Makes me look like I know what I am doing in the kitchen. :D

    I should add you can use any kind of potato you want. I have used Yukons and white ones as well as red. Just cook them any way you like and smash them! I microwave just because it is quicker. Oh - probably needless to say - but don't peel them. The peel helps hold them together better when you smash them.
    These are also good for breakfast with a runny egg on top!
    OK - I'm so hungry now. I want some breakfast! :D

I would up the garlic too, but I too am a HUGE garlic fan. Cute with the quails! I honestly don't think I would even know what one of those looked like lol! I don't get much of those around here! Do they eat just bird food?

    Yes, they eat seeds although they are known to eat small bugs. I like them for many reasons, but one is they eat up the seeds that the other birds knock to the ground. They scratch and peck just like chickens. I keep a shallow dish of water out there for them. They walk rather than fly (unless they are scared) so it isn't unusual to see a whole line of them walking down the road. They like groups.
    I'll post a picture of some quail in a thread here so you can see how pretty they are.
