Easy baked chicken dish. You will have all the ingredients on hand already. Can be marinated or made on the spot - both are good. Vaguely Greek-like so we like it with oven roasted potatoes and a Greek salad.

Hello Irishiz, I wanted to let you know I made this dish tonight and it was terrific. I let it marinade all day and served it with white rice which went perfectly with the delicious sauce. The chicken came out juicy, very garlicky (which I love) and very lemony. The hint of cayenne pepper added a subtle yet nice kick. One more thing, cross hatching the chicken gave it a lovely appearance! (I baked the chicken with the cross hatchings upwards. With a sprinkling of the parsley and plenty of sauce it didn't dry out and looked great!)
