    I am trying to weed out some of my bookmarks so I hope you will all put up with my postings!
    I had this one bookmarked since it was posted - three years ago. About time I got around to it. :)

    This made a very nice dinner for me. Easy enough to remember so I can un-bookmark it now!

    I made cornflour tortillas for these. It takes a little touch for the cornflour but the regular flour tortillas are much easier to make.
    Cornflour needs exactly the right amount of water to keep them from cracking or being too sticky. Two cups of cornflour to one and one quarter cups water. Add just a little more if needed. Pinch off a piece of dough golf ball size or larger, put it between a split open gallon freezer bag and smoosh it down with the bottom of a pot to get the circle shape of the tortilla started, then roll it out to size. That's for us'uns who don't have a tortilla press. Dry fry in a flat bottom saute pan over medium heat.

    Back on topic: Quesadillas were delicious. Used sliced up chicken thigh meat that was baked with several rubs the day before. Added quartered up 'shrooms with just a little onion. And the gruyere was smoked.
    Tore up a couple of tortillas before I got in the groove. Quite a meal. Dropped a pic on the recipe post.

    As a side note, after earlier posts I decided to trim my bookmarks b/c that just seemed ridiculous once I typed it! So, I remember seeing Keni say she doesn't keep her own recipes in her bookmarks, and got rid of mine. Then, just trimmed up the rest according to what I've tried and didn't like or duplicates/similar recipes for which I already found one that I really like, and I'm down to 68 pages now. Surely that will grow but now there's room for more discovery :-D

    I put a little IMI tag on the recipe, short for, I made it. Also don't forget you can add a short note to the recipe before you cut it loose.

    That is a brilliant idea, pso, the IMI tag. I have a few recipes I tagged "Made" but just a few. I should remember to tag all the ones I made.
    I always think about making my own tortillas because it does sound so easy. But, here in Northern California, there are quite a few Hispanic markets around. Some of the restaurants here even make their own tortillas. Very nice picture!
