    Greco Roman Pasta by Keni

    This is absolutely delicious! I did the vegetarian version of this recipe. It's a perfect blend of flavours, textures and seasonings! A 5 star recipe for sure! I followed the recipe exactly except I used chicken stock instead of wine, and I used a little extra as I wilted down the spinach to add more moisture. My husband raved about this dish, it is a "must make again soon!"

    Oh, I almost forgot, I did add something else, which I am totally surprised wasn't in this dish! I added some red chili flakes while sautéing the onion and garlic to add a little kick. I'm sure Keni would approve and she's giving me wink right now! ;) She sure loved her spices! :-)

    My pic isn't the greatest interpretation of this dish as my rotini broke up quite a bit as I must have overcooked the pasta! Most of the feta is hiding too, I did use a whole cup of it!

    It does make a lot! Just my husband and I ate it and we have lot's of leftovers, I should have halved the recipe now that I think of it! But the leftovers will be great for tomorrows lunch :)

    Wow that looks yummy! I also think she would greatly approve of the red pepper flakes :) I think your picture looks great! Almost all of her recipes feed 6 or more, she had a lot of Cowboys to feed. I'm always cutting her recipes in half!

I had the same sort of thing with the mascarpone seafood dish....forgot to buy a new wedge of parmesan, so I was eyeing the green can stuff.....felt I was being watched by someone with arms crossed, foot tapping. Thankfully, found a nub of cheese in the back of the fridge! And I also almost skipped the hot sauce, but relented...but she was right again! LOL!

    Lol Christinem, I could totally picture the foot tapping, arms crossed moment, I think she sent you a vibe! When I grabbed the chili's, I wondered "should I?" and in my head I heard a "heck ya, go for it!", so I did! ;)
    Thanks for the nice picture comments everyone. I just looked at the box of pasta I used and it was the gluten free version made with rice so no wonder it broke into pieces! I have so many kinds of pasta in my cupboard, I just saw the rotini and used it! I couldn't taste the difference though when we ate it :)
