Ingredients

How to make it

  • Cook pasta per package directions until al dente, then drain and set aside.
  • In large pot, melt butter(and olive oil if using) over medium and add garlic and onions.
  • Cook about 5 minutes, until onions are beginning to soften.
  • Add white wine.
  • Add red pepper and tomatoes and cook about 5 minutes, more.
  • Add cooked pasta, lemon juice, coriander, thyme, oregano, and feta(reserve some for topping, if desired)
  • Stir together until creamy and melted.
  • Add spinach and cook another 5 minutes or so, just to wilt it down a bit and all is warmed through.
  • Stir well, taste and add salt and pepper as needed.
  • Serve sliced or cubed chicken breasts over a bed of the pasta.

    Yum! This was excellent! I tend to use feta as more of a garnish than "melty" cheese, but the sauce was to die for. I made the chicken-less vegetarian version of this and it was both light and filling at the same time. Delicious!
