Hasselback Potatoes

    Recipe by Myszreesey: Hasselback Potatoes/saved
Wasn't able to get into the last Hasselback recipe posted in IMI so I tried this one. All of these Hasselback potato recipes here at GR are virtually the same.
    Crispy outside, creamy inside.
Enjoyed the flavor. Almost like country cut baked french fries.
Served it up with mayonnaise and just a dribble of hot sauce.
Recipe can be expanded out into any kind of rub spice to vary the flavor.

Those look really great, pso. I love crispy potatoes. I have made those before with the wooden spoon handle thing. Its a neat trick although I don't think the description on the recipe is the best. The way I do it is a wooden spoon on each side of the potato. Cut until you reach the spoons. The spoons stop the knife from going all the way through.

Those bread crumbs look nice and crispy! MMmmm... I'd serve them with ranch and sriracha! Frankieanne, it's funny I just saw this in my recipe box the other day and this must be the recipe you got your technique from years ago :) :) Crispy Crust Baked Potatoes

Didn't use that technique either. Used my tomato slicer to start the grooves so the slices would be evenly spaced. Then slid the potato off the back side of the cutting board and used a chefs knife to finish the cuts keeping the knife blade parallel to the cutting board. You cant' cut through the potato unless the knife is held way up on an angle. Just a smooth straight cut does the trick.
