Honey Baked Chicken for One

I made this for a pretty late dinner. Used the search by ingredient feature which really works well for me. And I wanted something simple and quick. This was it. I made 4 b/s breast and tripled the sauce. I tasted the sauce before pouring over the chicken. To me it was a bit sweet so I added some chipotle powder (about 1/2 t). That really made it for me. Sweet, smokey and a touch of heat. I love this sauce.

So nice to see you back Mr. P! I agree, sounds a bit sweet, and I'm sure adding the chipotle powder really helped tone the sweetness down, while adding some smokey heat! Genius:) Beautiful picture, going to bookmark this one and I'll make a note to add chipotle!

Thanks, NP. Its good to be back. This sauce is really good. I want to try it as a dipping sauce. Maybe for shrimp instead of my fingers. I kept dipping them into it. I love the smokiness of chipotle. Love it, love it, love it : )

Hey, that would work well as a dipping sauce for shrimp...grilled shrimp on the barbie (that's really the only way I like shrimp) with honey chiptole dipping sauce..yum:) LOL on using your fingers:D Who doesn't?!

Hi FA! Hot enough for ya?!

Thanks, FA. I thought about adding a celery leaf. Some survived in the fridge. But I wanted to try the purple basil

NP, I have never tried to grill shrimp. how do you keep them flat? Do you lay foil down?

We use bamboo skewers to grill the shrimp, which have been soaked in water for 20 mins or more (you have to soak the skewers before using so they don't burn up!)..they cook quickly and you just need to turn them once:)

This does look good! The purple basil is really pretty too!
That's how I do my shrimp on the grill usually too...with skewers. I've also used one of those grill pan things that you stick inside your grill so you don't lose stuff through the grates...

Thanks, NP. and ML2C. I dont have a "grill pan thing" (not sure if I know what that is) I do have wood skewers, tho. I assume those will do. And I always only turn things on the grill once. I will rotate/clock it now and then to get cross grill marks

And I didnt know the soaking in water tip. My skewers have always burned up : O Thanks for the tip. Now I know. : )

I have one like this and you just set it on your grill and put stuff in it :) I only use it for small things that I don't want falling through... http://www.bedbathandbeyond.com/product.asp?SKU=12268084&RN=2523&

That's pretty nifty ML2C! That would work well for grilling shrimp:) How did we get from talking about chicken to talking about shrimp?! Funny:)

I just saw on America's Test Kitchen that they did a test WITH soaking the skewers and WITHOUT and there was no difference if they burnt or not. I think I'd still go with the soak.
