Horseradish Crusted London Broil

    I made Tina's
    Horseradish Crusted Roasted London Broil
    for dinner last night. I marinated the beef for about 24 hours. Nice and tender. My London Broil was teeny, maybe a pound. The Horseradish/Dijon mixture smelled so good I could have eaten it with a spoon.
    Instead of cutting the horseradish mixture in thirds, as I should have, I just halved it. I browned the Beef as per the recipe and then coated it with the sauce and popped it in the oven for 15 min. I was worried I'd overcook it as I do like it Medium rare and it was small, and it turned out pretty well. My horseradish topping didn't really crust up. I don't know if it's because I put it on too thick? No big deal at all. It tasted fantastic. The horseradish certainly has a kick.
    My Mom went back for a second helping so she says to give her two thumbs up as well. :) And I'm very tickled to say that I have enough left over that I can turn it into a Horseradish Beef Toasted sandwich for lunch. Lookin' forward to that.

    It looks awesome! I love horseradish but my Hubby doesn't. Maybe some time I will be able to make this when he is away? It does looks so delicious that I feel like licking the screen:)
