    I have a write-up on applesauce in a recipe of mine. Of course that's for a large batch. But a small batch is easy too.
    Several varieties of apples work best. No need to peel or core. Leaving the peels on and cores in yield more flavor. No lemon juice or sugar needed either.
    Set a little water in the bottom of a pot on to a boil just to get things started.
    Wash and quarter apples. Throw them in the pot. When a raging boil, reduce to a simmer and covered until very soft.
    Put apples through a food mill or push them, with a ladle or such, through a fine steel mesh eliminating the core, seeds, and skins.
    Cinnamon and or other spices can be added but not necessary.
    Cut, boil, strain. What could be easier.
