Keni's Meatloaf!

    I pulled out WAY to much hamburger meat for burgers yesterday, so I saved the rest and made this. As everyone knows my husband hates meatloaf but he said he would make sandwiches tomorrow with the leftovers lol!! I did double up on the honey for the topping. My daughter LOVES meatloaf and gives it a thumbs up, and even my little guy ate it and he's not a meat eater!!

    Thanks for posting this ML2C. I've had it on my short list for quite awhile and this was a good reminder. I am like your Hubby in that I'm not a big meatloaf fan, but my hubby LOVES it. Keni's recipe appears to have a lot of flavour going on and I also like the sound of the glaze. Nice pic! :)

    Gosh, that glaze looks so good! Thanks for putting this here as I hadn't seen it before. She says to use one pound of beef and one pound of something else. Was yours all beef? I think I'd like all beef, although I wonder what beef and chicken would be like... I'd want to cut this in half as well so I suppose I'd use all beef anyway.

    That sure does look good! My beau requested Meatloaf With Spiced Maple Ketchup loaf a couple days ago, and he hardly requests anything. It was great but I might give Keni's a go next time! I like the idea of "the crispy parts" ;-)

    You know what, I didn't even notice the recipe said to use 1 lb each of different meat! I just read 2 lbs meat, and I used all ground beef lol! Shows how much I pay attention.
    DT I've never used maple syrup on meatloaf...sounds good!

    My favorite, so far, is still DT's Meatloaf With Spiced Maple Ketchup DT, you might have smoe competition with this one : )

    I had some ground lamb to use up so I did half of that and half beef. Lamb is really lean so I got really nice, firm little loaves - which I loved! I added my picture and more detail on the recipe.

    I heard a radio commercial from the 40's advertising French's horseradish mustard. I thought it sounded interesting so I decided to look to see if it was still around. I couldn't find one made by French's but I found a store brand (Raley's)! Very happy I decided to look. It was the only brand in the store so I don't know how readily available it is.

    Stores like Trader Joe's probably have a horseradish mustard, I suppose. I'm going to try it on a hamburger today.

    Frankie, I'm a BIG perfectionist and always have to have things just so! I can eyeball most things pretty well, but have never tried mini meat loaves. I'm in the process of making up my shopping list for my next grocery run and have added meatloaf ;)
