Keni's Nothing To It-Slow Cooker Refried Beans

  • mrpiggy 10 years ago
I knew I wouldnt feel like cooking when I got home from work, so I soaked the beans last night and set this up this morning. Came home to a great smell. I used around 7 cups of liquid. I also did not mash them up. I dropped my stick blender in for a few seconds to mash some and thicken it up a bit. I like a little liquid in my beans so I can soak it up with chips or tortillas. This is really good and very easy. Left all the onions and peppers in. Great recipe, Keni. Thank you

Will make this again with fresher dried beans. Had trouble getting them done. My bean pantry is getting old. Good flavor even if I did forget the second half of the seasoning at the end and went bashful on the Jalapenos. Only used one.
Made burritos with bacon fresh chopped tomato and sour cream.

Tip: a little veggie oil on the hands before dealing with the Jalapenos and a soap wash afterwards gets all the capsaicin off the hands so one doesn't go to the face for a burning surprise.
