Keni's Sausage Hash With Baked Eggs

    I made this last weekend. Used hot Jimmy Dean sausage. Followed all the directions. I baked it for 15 min and the eggs were still clear with only white edges, so I went another 5 minutes and they were overdone. : ( Other then that it came out perfect. Great late breakfast. First time baking an egg. Gonna try it again and take it out at 15 and the eggs will prolly continue to cook. This is really good. Thanks, Keni, for another great meal : )

    Thanks.....I havent been doing much GR cooking lately. I go through withdraws tho when Im gone too long. You should try this, FA. Im going to try it again, Keni, with some runny yolk.......even if I have to fry the egg separately : )

    Don't feel bad Mr P, I never have any luck with baking eggs, I always overcook the yolk! Still good that way, but I do prefer a runny yolk.

    I might try it in a itty bitty skillet. too A 6 is too small, tho I have an 8 that may hold enough. My 12 wouldnt hold the one pictured so I had to transfer it

    I made this for one (kids wanted basically the same thing but with the eggs scrambled into them). I didn't have the fresh thyme on hand so I just used some dried. Yay, I halfway mastered the baked egg! I did the tenting trick and the eggs were half runny half cooked, so next time, I think I'll have it down, about 30 seconds less in the oven. :-) Anyway, I thought this was fantastic, and the kiddos liked their scrambled version.... Added my pic.

    Glad you're getting close with your eggs...once you get it, you'll get it most of the time.

    The scrambled version is what we grew up with! We made it camping, etc...as I often do, I just took that memory and fiddled with it a bit. ;)
