    These are mini meatloaves. It's delish! and my kids loved it too!
    I made it with half beef and half pork. I followed the recipe exactly except used thin cut bacon. I didn't par cook the bacon because it was thin, so to get it brown I just broiled it for the last few minutes of cooking. I served it with Creamy Wasabi And Chive Mashed Potatoes which was a perfect accompaniment.
    I remember Keni and I talking about our love of condiments and how we prefer mustards to ketchup. We shared our love of different mustards, and wow, her collection surpassed mine! German mustard is a fav of ours, and Keni has lot's of recipes with it! Thanks for the recipe Keni, miss you!

    I love putting bacon of meatloaf, it gives it a nice crust and helps hold the loaf together....and....yummo! :)

    Keni's recipes crack me up. Three pounds of ground meat. ha I am one little person here. She always cooked for an army and its quite a challenge trying to figure out how to cut her creations down. :-D
    That being said, that is a beautiful teeny bacon wrapped meatloaf. I need to get out my calculator and do some math.

    I was almost going to cut this recipe in half, but I'm glad I didn't because we ate half of this tonight and the rest is tomorrows dinner. If you did half Frankieanne, you could freeze the other 4-5 loaves you get? They seem like a perfect bundle to freeze and heat up for a quick meal. :)

    Looks like I need to eat them up to add these to the freezer.
