Krumkake's Blueberry Coffeecake

  • mrpiggy 12 years ago
I felt like having something sweet for breakfast and had some fresh blueberries that I needed to use up. This was perfect. I used brown sugar for the topping instead of "sugar". I think I would have preferred all brown sugar but didnt think about it until after I had mixed the batter. This is SOOO good. Especially the topping
Thanks Krumkake for a great recipe

Wow, that's a great picture looking through that glass pan into that cake. I like the brown sugar idea, too.

Thanks, lady peoples : ) I forgot to mention that this took 50 minutes before the toothpick came out clean. I think I have satisfied my sweet craving for a month : D

Thanks, DT and LB. I think it would work with any small fruit. This "batter" is SUPER thick. I forgot to mention that I broke a wooden sppon mixing. It was pretty challenging trying to mix room temperature berries without them getting all moshed. Next time I try something like this I think I will freeze them before mixing them it
