K's Huevos Rancheros Supreme

    Oh my gosh all of the flavors are so good in this! I actually made this for lunch. I crisped up white corn tortilla in the oven as I thought it being soft would be hard to hold all the ingredients and I was right. Roasted the poblano, jalapeno and tomatoes together under the broiler. I saw she noted you could use chipotle peppers instead of the hot pepper, but I used both :) Did make the qaucamole but forgot to get it in the picture as well as the cheese which I used white cheddar. This is super flavorful and SO GOOD!!

    Poblanos have a little heat but are pretty mild. They are great for stuffing like the bell peppers.

    Thanks! Poblanos are hit or miss with me on heat. Mostly they are mild but I have gotten some that had a pretty big kick. I couldn't tell if this one was mild or not since I had the jalapeno's on there too.

    Buy a leathery one, not one that's dried hard. Split and seed it. Dry it in the oven and grind it up to make some ancho powder for use when the time comes. I might even have a recipe for that.

    Marie, this time I used bacon grease and just spooned it over the egg until done but I use this method too which is a bit healthier maybe?
