    Mexican Chicken

    Couldn't make up my mind how I wanted to cook my chicken breasts last night so I thought I would peruse my old friend Pat's recipes for an idea. She has so many good ones as most of you know. Came across this one that I made a couple of years ago and loved. I don't know why she called it 'Mexican' chicken as it has more of a sweet and sour flavor to it IMO. Served over rice with peas and carrots on the side.

    By the time I decided on this one I was a bit pressed for time so I kicked up the temp and decreased the time in the oven. Not too crazy about my pic so I'm not attaching it to the recipe. Maybe if one of you photog foodies make this you can post a prettier one on it. :)

    Sounds delicious!! I'm saving this one. I bet the peas and carrots you served on the side would be great just mixed in with the sauce before being pour over the chicken and baked.
