Nice mexican chicken casserole. Good for company too.

Ingredients
  • 3lbs. boneless chicken
  • 1 medium onion(chopped)
  • 1c ketchup
  • 1c water
  • 1/2c brown sugar
  • 3t worcestershire sauce
  • 1t salt
  • 1t pepper
  • 3t lemon juice

Directions
  1. Cut chicken in bite size chunks. Put 1c flour seasoned with salt and pepper in plastic bag. Add chicken and shake until pieces are coated.
  2. Saute chicken in butter for about 2 mins on each side. Put cooked chicken in casserole dish.
  3. Sauce:
  4. In saucepan, saute chopped onion in 1 T butter until tender. Add ketchup,water,brown sugar,worcestershire sauce and lemon juice.
  5. Let simmer 10 mins.
  6. Pour sauce over chicken and bake covered at 300 for 1 hour.
  7. Great served over rice.

Alterations


Instead of water I used chicken broth and I didn't really add any salt at all to the sauce. The dad added some Cholula hot sauce to his for some heat.
