    Mexican Supper Rice

    Wow this is a great rice dish. The only thing is go up one pot size when making this recipe as I found out the pot I normally use for making rice was just not large enough. Yes I always use 2 cups of uncooked rice here.

    Good flavor but a little bit of heat. Not too bad. Finished off the pot with some butter upon fluffing. Made my bowl with a little salt and a tablespoon of mayo to cut the heat.
    Used the mild can of Rotel and some home made taco seasoning. And used a can of creamed corn.
    Sprinkled on some nutritional yeast to give it a cheesy flavor.
