How to make it

  • Make 6-8 servings of rice in rice cooker or on stove top as you normally would except: use 1 can chicken broth as part of the 'water' needed. Add enough water to equal the amount of liquid needed according to your rice cooker directions or your usual recipe. (approx. 3 cups)
  • Before starting the cooker, add tomatoes, taco seasoning, and corn. Stir.
  • Cook according to rice cooker directions, or as you normally cook rice on the stove top. Fluff with fork before serving.

    Dec 5/15 Wow what a great recipe. I used the small can of diced tomatoes with chilies. The only thing I would suggest that you up the size of the pot that you would normally use. I have always used 2 cups of uncooked rice and it always fit in the pot LOL this time it came to the top of the pot. Will be making again as I know DH will enjoy this one for sure and he is not much into Mexican food.

    I made this for a pot luck today and it turned out nicely. Since I was taking it to a relative who doesn't like tomatoes I left out the rotel and bumped up the taco seasoning, as well as added cilantro. Thanks for this recipe.
