Michelle's Old Fashioned Oatmeal Cookies

    The BEST Oatmeal cookie I have ever made...no alterations needed. DO be sure to leave the raisins in the egg and vanilla as directed, and DO roll them in sugar before baking...adds a wonderful sugary crunch just as you bite into the moist, gooey-in-the-middle cookie. I baked them exactly 10 minutes in my oven to obtain a crispy edge and a soft middle (just my preference - bake longer if you don't care for that slightly underdown quality). I didn't have enough raisins today, so I split the batch in half and added the raisins for 1/2 of the batch, and the other half I added dried cranberries and white chocolate chips...both cookies were fantastic.

I soaked the raisins in vanilla with a little water for about 30 minutes while I put the rest of the recipe together. I did not use 3 eggs, only 2. I guess it depends on what size eggs you use.
