New York Rye Bread

    Great flavor.
    Had to make this twice. First time came out a little denser than I like.
    Second time assumed a typo in the amount of yeast and used tablespoons instead of teaspoons.
    Came out wonderful. Good rise. Nice and fluffy like sandwich bread with a little heavier crust. Good tight grain.
    Whizzed it up in the food processor.
    Mother doesn't like rye bread so I get this one all to myself.
    Hand kneaded. Used 4.5x8.5 1.5L Pyrex bread pan to get taller sides. Baked at 375F for 40 minutes. Preheated oven to 425F then lowered temp when loaf went in. At 30 minutes loaf wasn't quite done (175F) although the crust was browned up nicely.

    Sounds like there is another shortage. I think a lot of rye is grown in Oklahoma. Maybe its because of the drought?
