Notyourmomma's Irish Melt

    I was looking around for a fairly easy but festive thing to make for St. Patrick's Day Dinner and I decided on Tina's
    Irish Melt
    I bought a loaf of Light Rye and cut it myself into nice thick pieces. The addition of the horseradish to the mustard butter was inspired on Tina's part! Wow and yum at the same time! I have to admit to being a French's Mustard fan so subbed that for the grainy mustard that was called for in the recipe.
    I was a little worried between the grated apple and the addition of the brown sugar that it would not pass Hubby's "no sweet with the meat" bias. But he gave this recipe a total thumb's up "Really Good!".
    You saute the slaw mixture up along with sauteed onions and arrange it on the toasted slices of bread that have been slathered with the mustard mixture. Then the slices of lean corned beef (which I heated up a bit first in the microwave). Top with sliced cheddar and then pop under the broiler for a few minutes until warm and bubbly.
    I-Rish you would all try this recipe.....it's awesome!

    I plan on making these this week with our corned beef leftovers. I also have left over Delicious Creamed Cabbage With Bacon which I'll use for the cabbage. Well drained of course. Do you think that would be okay?

    Janet, That is a droolworthy picture! Thank you for the nice review. I want one for breakfast. LOL Love the shamrock and green mug......which gives me an idea for next year,,,get Fred some green mugs and he'll still think he is getting green beer. So glad it passed the hubby test!!!

    Laura, I think the well drained Delicious Creamed Cabbage With Bacon dish would be fine. And since you coated your corned beef with mustard the flavors should marry perfectly.
