NPMarie's Chicken Quesadillas

    I have been craving a quesadilla and this was perfect, quick and delicious. I was out of tomotoes and couldnt make the pico de gallo so I just topped it with Rooster sauce. I used the last piece of Wynne's Honey Chipotle Chicken. and pepper jack cheese. This had a great flavor with the cumin and smoked paprika. Great quesadilla NP. Thank you

    Haha it's funny you just posted this cause I was about to! I made this 2 nights ago to use up my left over pico from the last quesadillas. I as well liked the addition of the cumin and paprika... it really makes the dish! I only had a little monterey jack cheese so I threw in a little cheddar. Served it up with some gauc as well.     Quesadillas, homemade pizza, spaghetti, and tacos are probably the top things that I hear cheers for when the kids ask "What's for dinner, mommy?" And all those are easy, so I've been making them a lot more lately.

    That is still something I need to do. I have never made a pizza. And as much as I LOVE pizza, I really need to get that remedied. I have been meaning to get a pizza stone. I think I an even use my bread machine to make the dough

    Well to make it quicker I just use the premade pizza crust from the store or the refrigerated one in the tube....

    Hmm, I never even noticed that you could buy pizza dough in a tube. Ive seen that boboli stuff and thought about trying it on that. Does the stuff that comes in a tube taste like real pizza dough? That sure would be SOOO much easier

You guys crack me up! LOL

    I love quesadillas. I make them for breakfast a lot using some cheese, salsa, bacon and scrambled eggs. You can put so many different things in a quesadilla.
    I've used the Pillsbury pizza dough a lot. Its pretty good! Just unroll on a cookie sheet. Easy.
