Oatmeal Wheat Bread

    It's a good flavored loaf but not without its trouble. May have been self-induced as I always have trouble with 50% or more wheat loaves.
    May have to do this one again with another kneading. I assume the 10 minute bake at elevated temperature is for "oven spring", which I did not get.
    Internal temperature was almost 190 at the end of standard bake time but brown enough to pull. May have to "tent" next time and add a few minutes.

    Yes, used the mixer. It must be a technique to help make gluten in the wheat flour. I'm on the fence now on whether to try the full recipe for one loaf next time. Maybe after further kneading and I see better gluten development, then 2 loaves are the way to go. Three packets of yeast is probably an attempt to get better rise and maybe oven spring.

    Just had a sammie. Bread tastes real good with homemade applebutter slathered on it. Although it's going to spike my blood-sugar reading.
