Olive Soup

    Marie came across Tina's recipe for Olive soup the other day and as soon as she brought my attention to it I knew I had to make it asap.

    I have to admit to changing a few things around. It seemed weird to me to make the roux first and then add it to the soup later. Plus it worried me a little making the roux out of flour and olive oil (I've only ever made it with butter or margarine) and I could picture burning myself by dropping flour into hot olive oil. So I decided to just do a regular roux with margarine and flour and then I added the chicken broth to that and then the cooked olives, onions and garlic. Obviously the onion and the garlic totally complement the olives. I even added the entire medium sized onion as opposed to half as the recipe called for.
    I also didn't soak the olives for an hour in cold water. A) mine were already cold from being stored in the fridge :) and B) I love olive flavour and thought that if I soaked them I might water down the olive flavour.
    Once all those items were in my saucepan I just used my stick blender to blend it all up as opposed to pulling out the food processor.
    I added 10% Table Cream. The sherry and the tabasco are a lovely addition at the end.
    Someone who made this recipe in the past said that they found it too salty and would use an unsalted chicken stock the next time. My stock was unsalted and to be honest, I added a good 2 tbsp. of the olive juice to the soup at the end as well. You can't have enough olive flavour in my opinion! :)
    I'm totally adding this to my regular soup rotation. Anyone who likes olives is going to love this soup.
    Next time I will try the roux with the olive oil and flour as it just makes sense. Olives, olive oil.....

    Phew! I totally forgot about the soup thread my grey/ white hairs are showing again! Glad you don't have grey hair Janet:) Thanks for the reminder Frankie:) I shall try and remember the next time I make someone's soup in IMI.
