    Microwave Meatloaf
    I once dated a guy who told me that microwaves were only for re-heating leftovers and making popcorn. Well, I'd like to call him up and have him come over and try this one! OK. Well. No. Never mind. Anyway - this is a fabulous meatloaf recipe and I absolutely recommend it! My ground beef was very lean as it came from a rancher friend of our family so I'd recommend getting a really lean ground beef. The onions were perfect - soft but still kind of crisp. I shaped mine more into a "slab" than a loaf. I loved this and I will definitely be making it again. I was thinking a bit of brown sugar would be nice in the topping, too. Been making them that way forever...a trick I learned from Mom. Glad you tried one that way!! That's probably the only meat I actually cook in the microwave, but it's perfect, and tastes the same! So NYAH to the old boyfriend. lol at thinking about inviting him over. Thanks for sharing Pats recipe here! She has some great ones. : ) Great pic!

    Got home just after 8pm and wanted something quick. This was perfect. Cant believe how fast it was from the fridge to the table. Great recipe. I did add bronw sugar to the topping, along with red pepper flakes. I always do that with meat loaf. The onions on top is a new thing for me. I have always added them inside. I formed mine into a round loaf too. I also remember someone talking about putting bread under the loaf to absorb the grease, which I did. That did a great job.     I'm glad you tried this, MrP. It is ridiculously easy! I almost made it again this last weekend but got lazy (lazier than this meatloaf!) and ended up with hamburgers. Nice picture with that healthy celery. :)
