    Excellent oven spring. OK flavor. Wish they were a little lighter.
    Did not scald the milk, as my milk is already pasteurized. That saved a step.
    Took a little longer to rise, I think because of the sugar and butter amounts.
    Kneaded for 10 minutes and did an additional rise so the buns wouldn't be full of holes.
    If I make these again I'll scald the milk just to prove to myself that scalding isn't necessary unless I'm using milk from the farm.
    Scalding kills enzymes that block the bread from rising well.
    Took 20 minutes to get a good color to the buns.
