Orange-glazed Salmon Fillets With Rosemary

    I had to make two changes. I never have shallots for some reason, and I plan on making a good effort to buy them more often, so I just used plain ol' yellow onion. Also I do not like white wine, so I don't ever have that either...so I just used chicken stock. I do like white wine in cooking though, so I think next time I'm at the store I will pick up one of those mini sized bottles of white wine to keep on hand for cooking. The sauce in this is fabulous, used fresh orange juice and I actually spooned the sauce into a bowl and just dipped my salmon into it, yummy stuff :)

    Chicken stock is a perfectly acceptable sub for wine.
    Always cook with what you would drink. Maybe try a blush instead of white.

    I had to look up blush wine, said it's very mild in flavor. It's not that I HATE white wine, it's just that I prefer red, so I just don't buy white. My mom drinks the super sweet Mascato stuff so I think that gave me an aversion as well, since she would always pour me a glass and I drank it to be nice (BLECH)!

I always keep those little bottles of wine in my refrigerator, especially the red ones as I don't drink red wine. I get them when they are on sale and only use them for cooking. Although my visiting sister has been known to swipe a couple from me. :-)

    My Rosemary plant is still alive..I'm so happy about that..we haven't had the cold snowy weather yet this year..my other one died last winter:( I have to make a point to remember to cover it in bad weather..they actually grow wild up here as well:)

    Thanks Marie! I've had the same rosemary plant for 7 years! I don't think I could kill it even if I tried lol! It's huge and I have to cut it back a couple times a year. My pride and joy :) :P

    Rosemary is an evergreen, as is a lot of other spices. I had one too tens of years ago. It smells so wonderful when it rains. Going to have to try to grow another one.

    I have one in a large pot outside, and brought it up to the porch to shelter it from the weather. It dries out and comes back (or has so far) in the spring when I put it out. Put one in a flower pot inside the sun room and it does well unless I forget to water it for a while.
