    I was skeptical about this because of the yogurt. It was so thick! I thought I'd have big globs of yogurt on my chicken, but I didn't. The only "gripe" I have is that I think one could cut down on the bread crumbs. I halved the recipe (do I always say that? :D) and I threw away half of the bread crumbs. I had thighs around, so that is what I used. Very delicious chicken! I used Cajun Seasoning. Is that the same as Creole? Anyway - its all I could find.

Now I resent him for it in our spacious kitchen house, in need of a fryer :(

    I love "real" fried chicken, ml2c, but I can't stand pouring out all the leftover grease right down the drain. It just bugs me so much! And it can't be re-used. That's why I'm always trying new oven fried recipes. This one was great because of the foil lined pan. Just threw it all away.
    So far this is the best oven fried chicken recipe I've come across but I'm still on the prowl!

    Chicken tastes much better if it is soaked in milk overnight too! I do many meals on a foil lined pan. Yes clean up is much easier but also you can tent with the foil if needed. You won't of course with chicken if you want it to taste crispy and fried. I have a few LOL cookbooks to say the least! If I recall Ina Garten has one you may like. I will look it up it might help you quest for the Perfect Oven Fried Chicken.

    Mr. P, I forgot to answer your question about the skin. The breadcrumbs are sticking to all the yogurt, so I think skinless would be fine.

    I made this tonight. I followed most of the recipe, except for the bread crumbs. I was out of them. I chopped up just under a cup of almonds into crumbs. I also used cajun cuz thats what I had. This was really good. Mine didnt come out as crispy as I would have liked. I could have kept it in the oven longer but then the chicken would have been over done. I did 375 for just over 25 min. Chicken was perfectly done. Should I maybe have stayed at 400? Posted a pic on the recipe page.

    I kept my oven at 400, Mr. P. Your picture looks good though! I never would have thought of using almonds!
