    I made this recipe this evening and it was Awesome! I felt really good that it is 'healthy'. It has really good flavour and indeed the Horseradish is the "Go-to" ingredient in my opinion. The juices really get sealed in so its not dry and its not 'fried'. I used Chicken breasts and I suspect it'd be even way juicier with thighs. (Less healthy though) Loved, loved it. Great recipe Lori!

    I think you'd be okay to sub egg for the mayo Frankieanne. The egg would help too in sealing in the juices and you have the dijon and the horseradish for the flavour and if you're not keen on mayo then you wouldn't miss it would you! Perhaps even Ranch dressing or Plain Yogurt would make a good sub for the mayo too.
