Paleo Fried Chicken

    I wanted to make these into chicken tenders so I cut down my breast some. I was worried about this recipe, considering I have only worked with almond meal in baking breads. WE LOVED IT! Bri had 4 and Caiden ate 2, no complaints!! They didn't get very crispy, but I don't even know if that is possible with almond flour, but the flavor is fantastic. I think we just enjoyed the flavor of the almond flour over white flour, which is too cool! I don't think I used a full cup of coconut oil, maybe half a cup. Served some Paleo approved BBQ sauce to dip :)

    OK, I finally saw coconut oil the other day in the store I shop in. Almond flour? Not so sure. They do look yummy though. I'm glad the almond flour worked out for you.

    If you have almonds in your pantry you can certainly try grinding them in a spice/coffee grinder. But not so much to draw out the oil.

    Coconut oil smoke point is 350F.
    If there is not a flavor issue, then olive, peanut, and cottonseed oils have higher smoke points. Might be more readily available too.

    You can taste the coconut oil a bit the first couple of bites then your mouth gets used to it. We are used to the flavor now though. I can cook with olive oil, and avocado oil and any nut oils. Wanted to give the coconut oil a try first, considering it's pretty darn healthy :) Not sure the smoke point of the avocado oil or nut oils but I think next time I may try with olive.

    If you use olive oil, use light olive oil. It has more processing and a higher smoke point.
