    Parmesan Pork Medallions

    Another great recipe by Semigourmet for sure. Now the roast I used had a large bone in it so used the combo on the outside of the roast and roasted on my broiler pan. I also did not have plain but Italian bread crumbs and they would great. Will be making again.

    These pork medallions were terrific. I used tenderloins as the recipe states and lots of Dijon which lends great flavor to everything. Going to try the coating on chicken breast next. Thank you Semigourmet for this great recipe!
