Peanut Butter Apple Muffins

    These never shaped up like a muffin (as you can tell by the pic). More like a cheesy drop biscuit or something, they just held the shape of being put in the muffin tin. It was a very thick batter though. Tasted more savory...not very sweet despite the cinnamon/sugar on top, BUT I still liked it. I didn't think the kids would like them but they INHALED them!!! I was so surprised, probably the peanut butter lol! Very nice texture though and good PB flavor coming through.

    Hey MP......Muffins are meant to be more cake like in texture while biscuits are flakier and "lighter".... the process of combining the ingredients between the two are very different and that is where the texture difference comes from. Their " rise" agents work differently.

    Didn't have any trouble with the batter being too thick. But I was prepared to stir in some applesauce just in case.
    It does indeed have a savory flavor with less of a sweet note. Muffin tops have a little crunch because of the sugar/cinnamon topping. And the body is nice and soft.
    Mine turned out like nice muffins. Took a picture of the dozen with one split and another bottom side up so you can see the results.
