    Pepperoni Lasagna Roll Ups
This is really good! I never would have thought of the combination of rictotta, swiss and pepperoni but it definitely works! I'm not certain about 48 pepperoni unless she is talking the little ones - which I've never seen. Just heard rumors they exist. I had 30 regular sized and it was plenty. I also just cut my Swiss in half instead of thirds and posted some pictures of the assembly to show it worked just fine. I just noticed my Swiss pictured has no holes! but it is Swiss. How odd.
I really loved this and it was easy enough for a weeknight dinner and I'll bet those leftovers are gonna be good.

I think it's the culture used that makes it Swiss cheese. Different processes and timings make for large, small or no holes.

Those look great. Your pics looks like a lot of work but it only takes 30 minutes???
I have been on a pasta kick lately. Never tried lasagna, this looks simpler and it has pupperoni ?

Thank you for sticking up for my non-holey Swiss, pso, You're a gentleman and a cheese scholar. :-D
    Pupperoni!!! :-)
It should say 30 minutes to bake, MrP. It actually took me a little teeny more than an hour total time. Not bad at all. Once you get started, you get on a roll. So to speak. :-P

Pepperoni comes in different size sticks, from the large to the small. It's better priced in the stick than already cut up for you. Just run it through your food processor with the slicer disk. And the fresh cut pepperoni tastes much better than the pre-cut pre-packaged stuff. It is in the deli section of your super-store or a stand alone deli, which are wonderful shops. I haven't seen or been in one of those in about 15 years.

Yes, the Swiss was great, Marie. But - then - I love Swiss. :) But, its nice to know an alternative works as it would work for a plain ol' lasagna then.
I don't know that I've ever seen a stick of pepperoni, pso. I'll have to take a look.
One of these rolls made a great breakfast this morning. :)

They'll be hanging from a string over the meat enclosure with the rest of the cured meat sticks in a real deli.
