How to make it

  • Cook noodles according to pkg. directions; drain. Combine ricotta and herbs; spread 1/4 cupover each noodle. top with pepperoni and swiss cheese; carefully roll up.
  • Place seam side down in a greased 8x8" baking dish; top with spaghetti sauce. Cover and bake at 350* for 25 minutes or until bubbly. Uncover; sprinkle with parmesan cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 5 minutes before serving

    Wowie, this is some good food! I only did a couple of things differently. My chives weren't back enough yet from winter so I used about 1/2 tsp of chives and 1/2 tsp of fresh parsley. I also used Italian herbs instead of just oregano - 1 tsp. Used olive oil Pam to spray. I couldn't find my 8x8 pan so that's why there's so much room in it! I also didn't measure out the Parmesan - just sprinkled some on. Those rolls are slippery little things but I managed! Delicious and I'm going to enjoy the leftovers tomorrow night. Added a few step by step pictures and a thread in IMI. 2/28/13

    Wow, can't wait to try this out. The best of both worlds, pepperoni and lasagna. I always make this pepperoni roll - http://www.surerecipe.com/PepperoniPizzaRoll.aspx - but will be sure to try the lasagna roll soon.
