Pesto Chicken Burgers

    Another chicken burger winner! I am really starting to love ground chicken, and am even thinking about grinding my own...I have a grinder why not use it?! The only change I made was using almond meal in place of breadcrumbs. I was worried about there not being an egg but they held together beautifully :) I sauteed up some onions, bell peppers and mushrooms to go on top along with tomatoes and lettuce. No bun! This was delicious

I was kinda surprised at the tomatoes I've been finding this time of year, but I shop at HEB that only uses Texas grown, when in season veggies, and it's been unusually hot here for December, so that means nice tomatoes! Point's when you grind chicken do you just throw it in and grind it up, or do you need to add some sort of fat?

    Don't know. Never ground chicken before. Some 'net sites suggest using thighs. I might do a combo of breast and thighs. Regardless, I'll cut the meat up in about 1/2" pieces and freeze the for 20 minutes then grind in a food processor to a consistency I like. Throw the rest of the ingredients in and pulse to mix.

    Looks delish Michelle! I think using some thigh meat along with breast meat would be a good way to make sure you get some fat in your ground chicken..I personally like ground chicken/turkey breast, but it does tend to be dry. Adding the thigh meat would help for sure:) Love your pic, beautiful!

    I'm ashamed I forgot to put the pesto in the mix. Especially after I did a homemade pesto. Very tasty regardless.
    Made my own ground chicken too. Used 2 chicken breasts. So the burgers were about a third pound each.
    Sauteed up some onion and 'shrooms. Lettuce on the bottom, tomatoes on the top.
    Buttered the buns with salad dressing.

    Oh Man, I can't believe you forgot the pesto lol! You can always make it again using your homemade pesto, it really does add a lot of goodness to the burgers. Glad they still turned out good though, yummy looking photo :)
