    The directions weren't the best in this recipe but the result was delicious. What I did is on the recipe. My first time having polenta. This is kinda like an upside down Italian Tamale Pie kinda thing. Yummy.
    I have some more polenta to use up tomorrow. You know what that means... :-)

    Yes, I know that, pso. I've been eyeing these logs in my fresh vegetable section for quite a while. I also have had this bookmarked since it was posted. The log was $3.99 and I will get three meals out of it. Maybe even four. So, not a bad deal at all. There are some nice things about cooking for one. :-)

    You don't get off that easy. The store bought stuff is loaded with salt and other preservatives. Home made tastes so much better and you control your additives. Home made costs a quarter the amount.

    MrP - polenta is usually a creamy type thing made with cornmeal. I wasn't ever certain I would like creamy cornmeal (its a texture thing) so I have been eyeing these logs in my grocery store. It comes in a plastic wrap. The polenta log part is on the very bottom in my picture. It was really tasty and I think it would be great with just butter on it. I'm not certain how someone could make a polenta log at home. It was pretty firm and the polenta I have seen is very mushy like.

    Polenta comes in different forms. Sometimes referred to as corn meal mush, it can be cream of wheat in texture and eaten by spoonful. It can be a more firm text that lends itself to cutting. The latter has almost a rubbery appearance but cuts and chews easily. Both taste like cornmeal. It all depends on how much liquid is added to the recipe. Polenta is usually mixed with salt, butter, parmesan, and some liquid and maybe some spices.
    Masa is not cornmeal. Although from corn too, Masa is processed differently. It is usually used in making corn tortillas or a thickener for soups or breading like regular wheat flour is used. It has the texture of flour where cornmeal is more grainy. If memory serves, Masa is called cornflour, which is devoid of the endosperm and outer shell of the corn kernel.

    Thank you, Points. I looked and I actually have both. THey are fairly old. I think the cornmeal is leftover from when I made your cornbread. Hope thats still good. That Masa was never opened. I cant remember what recipe I bought that for. I have to make it a habit to check the cupboards more. And to write down a recipe when I shop for it or something

    For me, there's very lil difference between polenta and grits, as both can be made the same way...dressed up or dressed down.

    I had the log stuff once and hated it. :-) The texture of great baked polenta is fabulous, in my opinion.

    I don't know anything about grits or polenta. The only thing I know is I cannot stand the texture of Cream of Wheat and the look of polenta always reminds me of Cream of Wheat. Besides, my ex-husband loved Cream of Wheat and ate it every day so it reminds me of him. But, that's another story...
    I liked the texture of the polenta log. I broiled it and it got nice and crispy on the outside but chewy on the inside. It really reminded me of the topping of a tamale pie.
