    very nice breading recipe...crisps up great, with the cornmeal, and has a lot of flavor without being overpowering.

    I made a couple changes to this recipe that I don't think effected it much. I didn't use the soy flour and since I don't even know what nu-salt is I left it out and added extra regular salt. Also used chili powder in place of the cayenne since it's milder in spiciness. I used a little over a pound of chicken breast that I cut into kind of like strips/pieces. I had about a cup and a half of breading left over. So I could have probably halved this for my amount. I liked the flavor a lot, but I did not get a very crunchy texture like Keni and the recipe submitter got. I dredged the crap out of them too! Oh well, we still enjoyed it, and heck, the kids like it a lot! Adding my picture :)

    Regular table salt is a good sub for Nu-salt. Nu-salt is potassium chloride. It is a salt substitute for sodium chloride for those whom are on a restricted salt diet. It does have a bitter quality when not mixed with something else. So Nu-salt (brand name) is a blend of several salts to appease the salt restricted diet. It costs about 5 times as much as regular salt too.
    Frying in oil will make a crisper crust than baking. Double dipping in the breading will do that too. Just set out the breaded pieces on a rack for about a half hour to let the breading be adsorbed by the chicken then bread again.
